SHOULD I USE WOOD CHIPS OR THAT BLUE CLOTH LIKE STUFF AS BEDDING?
You definitely want the pink cage. Not that it's my favorite color, but you DO NOT want an aquarium for a gerbil. Gerbils are naturally energetic, meaning they'll want a lot of stuff to do. They also like to burrow and hide, so that nice little tube leading to that pink mini-room will be perfect. Along with the wheel. Wheels are almost a necessity for gerbils, because this allows them to get energy out when you can't play with them, also allowing for good exercise.
And all of that extra stuff... Water bottle and food dish are a MUST. However, all of the extra toys and gizmo's aren't necessary. You can most definitely give your gerbil a treat now and again, but don't engorge them. Besides, putting all of that extra stuff will just take up room, making things more complicated.
For the bedding, I'd say to use just regular bedding. If you don't like this, then go with the wood ships. It's more natural, and it'll soak up all of the liquid waste nicely.

They don't need that much space (unless you completely ignore your gerbil). If you play with them regularly (and for long periods of time) space isn't a huge factor. Yes, they need space. But the aqaurium doesn't provide the "obstacle courses" needed to keep your gerbil entertained while you're gone.
Now, the whole ventilation thing? Not all cages of that similar type are exactly like that one. You can get cages with more holes which will provide plenty of ventilation.
And the chewing thing... I've owned many gerbils and hamsters over the course of three years (mostly because of the offspring) and I can tell you this: If you provide plenty of scented chew toys for them, the whole chewing through the plastic thing won't be a problem. Besides, if you play with them enough, they most likely won't have the energy to chew through the plastic.
Yes: Food dishes are NORMALLY a necessity, because if the gerbil is likely to pick up some sort of illness, it's nice to monitor how much s/he is eating (just as liveyourlife said). It may be more natural, as she said, however it's best if it's set for them. It's easier, and safer (medically speaking).
I also agree with the pine and cedar comment. There are many toxins which may increase the likeliness of illness'. I actually just lost a baby rat on Wednesday to a respiratory infection, and I believe the pine bedding we had actually enforced the infection. Not the best to get.
