Are frozen vegetables as healthy as fresh veggies? Broccolli in particular.?
I like to try and eat healthy, but I'm wondering if a frozen bag of Green Giant Broccolli is as healthy as buying the fresh stuff. I think the fiber content is still there, but I'm wondering about the vitamins. The frozen stuff is so much easier to work with, but I feel I may be losing out on some of the benefits. Same goes with cauliflower too.
Hi Trevor! Frozen vegetables are actually as healthy or healthier than fresh vegetables. All vegetables lose vitamins, minerals, and nutrients as time elapses from when they're picked, unless you can halt the loss of such vitamins, etc. Canning actually boils out vitamins, etc. and refrigeration still allows the same vitamins, etc. to be lost, but it does slow the ripening process. Flash freezing severely retards that same loss of vitamins, etc. and seals in the goodness! Normally produce is picked and goes either to market/stores, canners, or frozen food processors. In the amount of time it takes produce to get to a market/store it can be flash frozen below 0 degrees. At that point loss of all vitamins, etc. occurs at a rate far less than fresh veggies. You can have that frozen veggie next week or next month and it still has relatively the same amount of vitamins, etc. as it did when it was frozen. I hope that helps!
