Fiber Hair

How EXACTLY are Hair Fibers damaged By Flat Irons?
Could you PLEASE be very specific? Are there bonds in the hair fibers which are damaged and what are they called?
I want a really in depth answers please
Hair is made up of protein mainly- think of a strand of healthy hair as a piece of thinly cut raw steak (gross I know but it behaves the same way!), it is very soft, pliable and does not break apart very easily.
What happens to that steak when it get's thrown on a hot hotplate or frying pan? it goes grey, turns stiff and if it is cooked for too long it goes dry and breaks a lot more easily when compared to the raw steak.
When you use heat to style it too often you are basically cooking your hair and when you overcook it it becomes like that inedible overcooked steak.
Not the best of answers but without pulling out my old university science textbooks and going into chemical names and structures it is the most accurately descriptive metaphor I can give! I hated that unit of science so I REALLY don't want to have to revisit those textbooks!
