How to thicken a sauce without adding a lot of calories?
I just made a great braised chicken dish and while it tastes great, the sauce is a bit thin. I'd love to thicken it up somehow, but I don't want to add a lot of calories (so no cream or butter, please). Any ideas?
there are not a lot of calories in either corn starch or flour for thickening sauces when divided by the number of servings.
I would mix 1 tablespoon cornstarch in about 1/4 cup cold water, then whisk it into the boiling sauce. Stir and cook til it clears. If this is too thick use less cornstarch next time. The above amount is for about 2 cups sauce or gravy.
